LODI - Cottage Bakery Inc., the commercial baking company founded in 1954 as a retail shop in downtown Lodi, is being acquired for $170.8 million in cash by Ralcorp Holdings Inc. of St. Louis, the companies announced. Terry Knutson, president of Cottage Bakery, and his management team are expected to remain in place as the company becomes part of Ralcorp’s frozen bakery product segment. That segment accounted for $111.9million of Ralcorp’s $462.4million in net sales in the three months ended June 30, its latest reporting period. Cottage had gross sales of $125million in the fiscal year ended June 30 and employs 690 people at its Lodi plant. The sale is expected to close within 30 days. Ralcorp projects the acquisition will add 9 to 12 cents to diluted earnings per share to its results annually. Currently, the majority of closely held Cottage Bakery is owned by several charitable religious organizations, which Knutson declined to name, and the Knutson Family Trust. Most of the proceeds from the sale will go to those organizations, as well as Cottage Bakery managers and employees, Knutson said Thursday.

Out of the way on South Stockton Street, the bakery makes a pretty good latte. They always have a great selection of fresh pastries and even some day old breads that are super cheap. If your lucky you'll wander in on a day when they bake one of their old favorites like gourmet blueberry muffins or raspberry cheese pockets (assuming I don't arrive first and buy them all up!) By far the best deal is in their refrigerated section. Here you'll find mistake cakes and end run pastries. Killer deals and many times you don't even notice the defects. There's a reason why Cottage Bakery shut down it's Restaurant / Bakery on School Street years ago, which is the present location of Shangri-La Asian Bistro ( yelp.com/biz/shangri-la-… ).
