The chain operates primarily in Chicago's predominantly black south side and south suburbs, but has additional locations in Northwest Indiana and one location each in Peoria, Illinois; Indianapolis, Indiana; Phoenix, Arizona; Atlanta, Georgia; Las Vegas, Nevada; and Los Angeles, California.[2] Harold Pierce, an African-American Chicago entrepreneur, founded the restaurant in 1950 as a small operation on 39th Street. The name of the first restaurant prior to Harold's was H&H (Harold&Hilda), and they specialized in dumplings and chicken feet, both common soul foods. Gene Rosen, a friend who owned a poultry shop nearby, supplied chicken to Pierce. The character of Harold's developed primarily out of necessity, because the larger fast-food chains tended to avoid African-American neighborhoods. In turn, Chicago's legal and social obstacles to black-owned businesses at the time prevented Harold's from expanding into downtown or the North Side.[3] Harold's became the only thriving franchise food chain that was operated during a time when segregation publicly existed. The chicken can be served plain, but usually, a sauce or seasoning is added. Popular choices include mild and hot sauces as well as lemon pepper seasoning. In Chicago-styled fried chicken, the sauce is drizzled over the chicken and fries which results in the chicken skin softening as it soaks up the sauce.

But the experience can vary wildly from store to store. I wanted to finally, once and for all, end the argument over which Harold’s is the best. So I decided to visit all 20 of them in the Chicago area. To avoid getting suckered by a pretender, I kept my ranking only to those locations the company claims on its website. My takeout routine was the same every time: I ordered a “half dark hot.” And I often ate a thigh before I was out the door, licking my orange fingers under the neon light from that familiar sign of an ax-wielding chef.
